Blueberry Oatmeal Protein Cookies
So freaking good, quick, and of course super healthy!!
1 ½ cup of oats
1 cup of fresh or frozen blueberries
1 teaspoon of honey
Preheat oven to 350°
Start with mashing two peeled bananas in a bowl
If you’re using frozen blueberries, I recommend warming them in the microwave for about 25 seconds… this will also give your cookies a purplish color as the blueberries begin to burst open. Add the blueberries to the peeled banana mix, along with the oats and honey and mix together.
Let the mixture chill in the refrigerator for about 30 minutes.
Use a nonstick cookie sheet and make 1” cookies from the mixture.
Cook for 15 minutes.
Let the cookies sit for about an hour before serving!
Makes 1 dozen cookies!
